Spanish Datil pepper seeds were brought to St. Augustine by the Minorcans in 1777. Since this time, the pepper has been a prominent ingredient in Minorcan recipes including homemade sausage and pilau, which is meat, seafood, chicken or vegetables cooked with rice. If you've ever had Minorcan clam chowder, you already know about the great flavor enhancer the Datil pepper can be.
Wanda Bates, owner of Datil Dew Pepper Products, retired in 1991 to help with the care of her husband that had contracted post polio syndrome. When retirement became a bore and fishing was commonplace, an acquaintance that owned a restaurant complained about his Datil Pepper sauces having little or no shelf life in the hot Florida sun. He mentioned to Wanda, "What is needed is a great tasting Datil pepper sauce that stands up to the rigors of the climate without preservatives."
